I love fresh herbs... and I enjoy mixing them up.
I have some Tarragon, wish I find wonderful in small amounts, Flat leaf parsley (a big favorite), thyme, and basil...
Pre heat an own or toaster oven... and have a pie pan ready.
I chopped the herbs up and coat two chicken breast that had been marinated and rinsed. See *** for Chicken marinades
I put a T. of butter and melted on a medium heat...
Cooked the breast till the herbs where crispy and heat in the oven for 5 min then turn it off to keep warm.
Now take the pan and deglaze with 1/4 c. ish of white wine... once reduced add a chopped clove of Garlic.
maybe a bit of olive oil..
once the garlic cooks down a bit add
reduce till sticky on the pan and wisk 2-3 table spoons of butter...
Slice the breast cover and sauce...
if you are good you have already made a risotto.. I will post that tomorrow.
