So I sliced up a fennel bulb today.
In the saute pan I had some chopped one clove garlic, 1 T. ginger and 1 T. lemon grass with a bit of olive oil sautéing... then I added 1/4 c. White wine. cook 30-60 seconds...
threw in the fennel top with 1/4 cup water... and put a lid on it.
this is going on at a medium low for 6-8 minutes.
turn the broil on
take the lid off and let the liquid cook off for 2-3 min...
if the pan is all metal out it under the broiler... 4-5 minute I think.
Oh if your pan is not metal... put it in something that can go in the oven.
You wanted to caramelize the tops//
I had some with tangerine segments. then later I chopped some up and put it in the lentil soup.
I would throw some in a salad, or puree it and add to chicken stock and cream... for a soup or a sauce//
